Meaty and delicious shrimp scampi with Sealand's colossal black tiger shrimp.

Ingredients

1 bag Sealand Colossal Raw Black Tiger Shrimp, defrosted overnight in fridge

6 cloves garlic, minced

1 tsp each Kosher salt and black pepper (to taste)

2 tbsp fresh oregano leaves, minced (or 2 tsp dried)

2 tbsp olive oil

1 tbsp butter
-
2 tsp olive oil
-
4-5 garlic cloves, sliced
-
1 tsp chili flakes (to taste)

2 tbsp fresh oregano, roughly chopped (or 1 tsp dried)

1 cup white wine or chicken stock or combo of both
-
6 tbsp butter at room temperature
-
1 lemon, sliced
-
1 tbsp minced parsley and chives
-
2lbs cooked spaghetti, tossed with 2 tbsp butter

Directions
In large bowl, toss shrimp with garlic, seasoning, oregano and olive oil. Set aside for 30 minutes before cooking
Preheat skillet over medium-high heat for 2 minutes, then add 1 tbsp butter
Add single layer of shrimp to skillet and cook for 3 minutes without flipping until shrimp start to turn pink on bottom
Flip shrimp and cook for further 3 minutes until pink
Remove shrimp onto separate platter and drop heat to medium
In same skillet, make scampi sauce
Add oil and sauté garlic, chili fakes and fresh oregano for 2 minutes until garlic turns translucent
Add wine/stock and bring to gentle boil, then drop heat to medium-low
Let sauce simmer for 3-5 minutes until reduced
Add shrimp back to sauce and toss for 1 minute, then drop heat to low
Add butter one tablespoon at a time while mixing until blended into sauce
Turn off heat immediately after adding last tablespoon of butter
Garnish with chives and parsley and serve over buttered spaghetti with extra sauce on top
