Creamy Mashed Potatoes with Sealand Cooked Roast Beef in Gravy

Ingredients

3lbs Yukon gold potatoes, peeled and cut into 2-3 inch chunks

8oz cream cheese at room temperature
-
4oz salted butter at room temperature
-
½ - ¾ cup whole milk, half & half or buttermilk

Salt and pepper to taste
Directions
Preheat oven to 350°F
Cook beef roasts from frozen. Rinsed sealed packages under warm water for a few minutes to loosen contents
Cut open packages and transfer beef roasts and gravy to covered oven safe dish
Roast covered for about 60 minutes until beef reaches an internal temperature of 165°F at the center
While beef cooks, make mashed potatoes
Fill large saucepan halfway with cold water
Add potatoes and 1 tbsp of salt
Bring to boil over medium-high heat, then lower heat and simmer until potatoes are fork tender (about 15 minutes)
While potatoes cook, add cream cheese and butter to the bowl of a standing mixer
Heat whole milk/half & half/buttermilk in a saucepan over low heat until little bubbles appear around the edge
Drain cooked potatoes and immediately dump on top of cream cheese and butter in bowl of standing mixer
Let stand for 5 minutes to allow cream cheese and butter to melt
Add ½ tsp each salt and pepper to mixing bowl. Fit mixer with paddle attachment and begin to mix on slowest speed
Add whole milk/half & half/buttermilk slowly until you achieve your desired consistency
Taste and add extra salt and pepper if required
Remove cooked beef roasts from oven and serve alongside creamy mashed potatoes
