Ingredients

1-1.5lbs Sealand Lobster Tail, thawed, shell removed and cut into bite-sized pieces

4 large potatoes, starchy like Yukon Gold or Russet, chopped into bite sized pieces

3 medium cooking onions, diced
-
1 cup celery, diced
-
1 clove garlic, minced
-
½ cup diced fennel
-
½ cup diced carrots
-
1 tbsp Kosher salt
-
1 bay leaf
-
4 cups chicken broth
-
1 cup of half and half cream
-
¾ cup white wine
-
¼ cup unsalted butter
-
1 can of clams in juice (approx. 6.5oz)

1 tbsp olive oil
-
½ cup fresh parsley, chopped
Directions
In large soup pot, add oil, onions, celery, garlic, fennel and carrots over medium heat
Add potatoes, salt, bay leaf, chicken broth and wine; simmer for roughly 25 mins
Add raw, thawed seafood and canned clams with juice and butter. Cover and simmer for 5-10 mins or until seafood is cooked through.
Add cream and stir to warm through
Garnish with parsley and serve
