Roast Sweet Potato Stuffed With Maple Roasted Bacon

Directions

1. Preheat the oven to 425 degrees F.

2. Start with the sweet potatoes, toss the sweet potatoes in a bowl with salt, pepper and olive oil.
3. Use a fork to prick the sweet potatoes all around.
4. Wrap each sweet potato in foil, and place them on a baking sheet.
5. Roast the sweet potatoes until tender, flipping them halfway.
6. Depending on the size of the sweet potatoes, this can take anywhere between 50-70 minutes.
7. Once the sweet potatoes are ready, remove them from the oven and let them cool slightly to handle.
8. In the meantime, set the oven temperature to 373 degrees F.
9. Place the bacon in a single layer over aluminum foil on a baking sheet.
10. Season the bacon on both sides with salt, pepper and brown sugar.
11. Brush with the maple syrup. Place the bacon pan in the oven.
12. Roast the bacon for a total of 25-28 minutes, making sure to flip halfway.
13. Set the bacon aside to cool slightly.
14. Unwrap the sweet potatoes, and cut along the centre of each, but not all the way through.
15. Pinch the sweet potatoes on both ends and push towards each other lightly to create a boat like sweet potato.
16. Season the sweet potatoes, and place 1/2 cup of cheese in the middle of each sweet potato.
17. Place the sweet potatoes back in the oven and cook for 10 minutes until the cheese has melted.
18. In the meantime, chop your bacon into 1 inch pieces.
19. Once the cheese is melted, stuff the sweet potatoes.
20. Add rosemary, cranberries, the bacon, more rosemary, some jalapeño, and finish with a drizzle of maple syrup and chilli flakes.
