Ingredients

Shrimp

• 2 lbs Sealand Cooked Shrimp XL , defrosted and diced into nearly 1 inch pieces

• 1/4 teaspoon each salt and pepper
• 1/2 cup lime juice or lemon, or a combo, or any citrus 

Ceviche Ingredients

• 1 cup tomatoes diced

• 1 jalapeno minced
• 1 1/2 cup cucumbers diced
• 2 avocados diced
• 1/2 cup red onions minced
• 1/2 cup cilantro minced

Directions

1. Start by chopping the shrimp into 1 inch chunks, make sure the remaining ingredients are approximately the same size.

2. Place the shrimp on a serving platter along with the seasoning and the lime juice, and toss well.
3. Add the remaining ceviche ingredients over the shrimp and mix everything well.
4. Cover and let it sit for about 30 minutes to marinate and infuse the flavors.
5. Serve the ceviche right away with some pita chips or tortilla chips.
