Each shrimp, sourced from the wild Argentinian seas, is marinated in a simple yet flavourful blend of olive oil, salt and pepper. The chimichurri sauce, a dynamic combination of garlic, herbs and chili, adds a bright and herbaceous punch to the dish. As the sauce mingles with the warm shrimp, it releases its aromatic oils, enhancing the shrimp's natural sweetness. Preheat the grill to 450 degrees F. If you can’t grill outdoor, use an indoor grill pan.
Place the defrosted shrimp keeping their shell on, in a large bowl.
Season generously with salt, pepper and olive oil.
Make the chimuichurri sauce by using a small food processor, an immersion blender or a mortar and pestle.
If using a mortar and pestle, make sure to first mash the garlic with the salt until smooth, and then proceed by adding the herbs and chillies while adding in the olive oil gradually.
Set the sauce in the fridge while you start skewering and grilling the shrimp.
Remove the skewers from the water and start skewering the shrimp making sure to skewer the head and tail. This allows the shrimp to cook evenly and voids curling.
Cook the shrimp for 3-4 minutes per side. Avoid over cooking them as the texture will change.
Once the shrimp has cooked and still hot off the grill, drizzle it with generous amounts of the chimichurri sauce. The sauce will permeate into the shrimp adding a zesty bright flavour.
Garnish with extra lemon slices and serve right away.
