Salmon Pinwheels with Beurre Blanc Sauce

Preheat oven to 400°F (205°C)
Place frozen pinwheels on a lined or non-stick baking sheet. Bake for 25-35 minutes or until the internal temperature reads 178°F (81°C)
Meanwhile, combine wine, vinegar and shallots in a saucepan. Reduce until about 2 tbsp remains
Cut the butter into small pieces
Add the butter to the hot reduction over medium high heat and whip vigorously. When butter is all melted, remove from heat and continue whisking until smooth
Add salt to taste. Shallots may remain or be strained out
Hold the sauce in a warm, not hot, place until served. Stir or whip from time to time. Serve as a sauce over the pinwheels or as a dipping sauce
