Ingredients

1 tsp vegetable oil

1 lemon, sliced into rings for garnish

½ head romaine lettuce, diced

2 red peppers, diced

½ whole English Cucumber peeled, cubed

8 - 10 cherry tomatoes, cut in half

¼ small red onion, diced

6 Kalamata olives

2 ounces Feta cheese, crumbled

⅓ cup olive oil

1 tbsp white wine vinegar

1 tbsp dried oregano

2 cloves garlic, minced
-
1 tsp fresh lemon juice

1 tbsp Kosher salt

¼ cup flour
-
¼ tsp each salt and pepper

Directions
Remove halibut fillets from fridge, pat dry and lightly salt and pepper each side
Add salad dressing ingredients to small bowl and whisk until well combined
Add lettuce, peppers, cucumber, tomatoes and onion to large salad bowl. Add salad dressing and toss well.
Top salad with Feta cheese and olives
Mix batter ingredients in wide sided bowl. Place halibut fillets in batter and gently toss to lightly coat on all sides, shaking off excess flour
Heat a 12” non-stick pan over medium heat. With paper towel wipe 1 tsp vegetable oil around pan
Cook halibut in heated pan for 3 mins. Gently flip and cook for another 3 mins
Serve with salad and garnish with 3 lemon slices
