Ingredients

• 2 Sealand Veal Chops

• Salt and pepper (to taste)

• 2 tbsp olive oil

• 2 cloves garlic, minced

• 2 celery ribs, medium diced

• 2 carrots, medium diced

• 2 cups beef broth

• 1 ½ cups tomato passata (pure tomato)

Gremolata

• ½ cup chopped fresh parsley

• 1 clove garlic, minced

• Zest of 2 lemons, finely chopped

Directions

1. Defrost veal chops and season with salt and pepper

2. In small pot, heat olive oil and add onion and garlic. Sauté 2 mins until translucent

3. Add carrot and celery and sauté for 3-5 mins. Then add beef broth and tomato passata

4. Simmer until reduced by half. Season with salt and pepper to taste

5. Combine gremolata ingredients in small bowl and mix well. Set aside

6. Grill veal chops until meat thermometer reads 65°C (150°F) at the centre

7. Serve over a bed of mashed potatoes and your favourite vegetables. Pour sauce over veal and top with Gremolata
