4 pieces Sealand Skin on Salmon (defrosted in fridge)

1 tsp olive oil

½ tsp salt (to taste)

½ tsp pepper

2 tbsp olive oil

1 lemon sliced

2 cloves garlic, sliced

8 sprigs thyme
-
Cherry tomatoes (optional)

1 large clove garlic
-
2 tbsp Dijon mustard

2 tbsp honey

1 tsp dried oregano leaves

1 tsp fresh oregano leaves

2 tbsp lemon juice
-
2 tbsp white balsamic vinegar/white vinegar

⅓ cup extra virgin olive oil

¼ tsp salt

Pinch of black pepper

2 tbsp crumbled feta cheese
-
1 tbsp minced Kalamata olives (optional)
-
3 cups lettuce of choice
-
1 large cucumber, diced into 1cm cubes

4 large tomatoes, diced into 1cm chunks

1 cup feta cheese, cut into 1cm chunks

2/3 cup black olives (Greek Kalamata)

2/3 cup green olives

1 red onion, diced into 1cm chunks

Directions
Preheat oven to 450°F
Season thawed salmon with salt, pepper and olive oil on both sides
Add olive oil to four individual oven-safe ramekins or dishes (if baking each salmon piece in its own dish). Alternatively, to bake all four salmon pieces together, use 9 inch by 13 inch oven safe dish
Add lemon slices, garlic slices and fresh thyme sprigs and place salmon on top
Scatter tomatoes and olives into baking dish (optional)
If using ramekins, place them on baking sheet. Otherwise, place baking dish(es) in oven and bake for 15-20 mins (depending on the size of fillets) until salmon is firm to touch when pressed in center and reaches internal temperature of 145°F
While salmon is in oven, make Greek salad dressing
Use mason jar with lid or any sealable container. Place all dressing ingredients in container/jar
Seal container and shake dressing vigorously until emulsified
Prepare Greek salad by chopping all ingredients and adding them to large bowl.
Dress salad with 2-3 tbsp salad dressing (to taste)
Remove cooked salmon from oven and immediately pour 1-2 tsp salad dressing over each fillet. The hot salmon will absorb the dressing flavours
Serve salmon along side Greek salad and enjoy!
