Ingredients

4 pieces Sealand Boneless Chicken Breast - Sweetheart (thawed) or Sealand Boneless Organic Chicken Breasts

Coating

1 cup freshly grated Parmesan cheese
Salt and pepper to taste
⅓ cup all purpose flour
2 tbsp fresh oregano, minced (or 1 tsp dried)

Creamy Lemon Sauce

2 tbsp butter (unsalted)
2 cloves garlic, minced
1 tbsp fresh oregano (or ½ tsp dried)
2 cup cream (18% or 35%)
1 lemon, zested
Salt and pepper to taste
½ cup grated Parmesan cheese (or to taste)

To Serve

2 tbsp capers, drained
Fresh oregano leaves
Extra Parmesan
Lemon slices
1lb cooked pasta

Directions

Boil water and cook pasta as per instructions on box
Add all coating ingredients to shallow plate and mix well
Dredge thawed chicken breasts in coating mixture on both sides, making sure each chicken breast is well coated
Preheat sauce pan or deep skillet over medium heat and add butter
Once butter has melted, add chicken breasts to pan
Do not flip chicken until it has a golden sear (3-5 minutes)
Flip chicken and cook for another 3 minutes until golden on both sides (but not cooked through)
Remove chicken and in same pan, proceed to make sauce
Add butter and garlic and sauté for 2 minutes
Then add cream, lemon zest, seasoning and Parmesan cheese
Return chicken to pan and allow to simmer in sauce for 5-8 minutes until cooked through to an internal temperature of 165ºF
Garnish with oregano, capers, lemon slices and extra Parmesan cheese (to taste)
Plate cooked pasta with chicken on top and drench with sauce
