Using sharp scissors, cut lobster shell longitudinally along centerline up until the tail fin
Rinse lobster tail under cold water, flushing water through cut in shell to remove debris
Bring pot of water to boil
Add lobster tails to pot and boil for approximately 8 mins until the meat is opaque and firm and the internal temperature reaches 145°F in the center of the tail
Remove tails from pot and briefly run under cold water to cool slightly
Remove lobster meat from shells and serve with a dip of fresh lemon and melted butter
