Spicy Caribbean Snow Crab Clusters Soup

Directions

1. Remove the Sealand Greenland Crab Clusters from the bag and defrost overnight in the fridge or on the kitchen counter for 2-3 hours.

2. Preheat a heavy pot over medium high heat and add the butter.
3. Cook the onions and celery in the butter for 7-8 minutes until soft.
4. Add in the garlic and bell peppers and cook for another 3-4 minutes until fragrant.
5. The tomatoes go in, season and cook until the juices are released and start to concentrate.
6. Add in the flour and cook for 2 minutes to toast the flour slightly, add cilantro and if you like, add the jalapeños.
7. Now add the stock and crushed tomatoes, and increase the heat to high.
8. Cover the pot and bring to a boil, then drop the heat to medium for a gently simmer.
9. Add in the crab claws, and corn and cover the pot again.
10. Cook for 15 minutes until the crab is ready and you can simmer for up to 30 minutes.
11. Serve the soup with lime, cilantro and jalapeño.
