Ingredients

2 pieces of Sealand Greenland Snow Crab Clusters, defrosted
- 3 Tablespoons Butter
- 1 large onion, diced
- 2 stalks celery, sliced
- 5 cloves of garlic
- 1/2 cup bell pepper, diced
- 2 cups fresh tomatoes cut into 4
- 1 tablespoon cajun spice
- 1 Tablespoon all purpose flour
- 1 jalapeno, sliced
- 1/3 cup cilantro leaves
- 3 cups Stock (veggie or fish stock)
- 1/3 cup crushed tomatoes
- 1 cup fresh or frozen corn kernels

Directions
Remove the Sealand Greenland Crab Clusters from the bag and defrost overnight in the fridge or on the kitchen counter for 2-3 hours.
- Preheat a heavy pot over medium high heat and add the butter.
- Cook the onions and celery in the butter for 7-8 minutes until soft.
- Add in the garlic and bell peppers and cook for another 3-4 minutes until fragrant.
- The tomatoes go in, season and cook until the juices are released and start to concentrate.
- Add in the flour and cook for 2 minutes to toast the flour slightly, add cilantro and if you like, add the jalapeños.
- Now add the stock and crushed tomatoes, and increase the heat to high.
- Cover the pot and bring to a boil, then drop the heat to medium for a gently simmer.
- Add in the crab claws, and corn and cover the pot again.
- Cook for 15 minutes until the crab is ready and you can simmer for up to 30 minutes.
- Serve the soup with lime, cilantro and jalapeño.
