The succulent dark meat of the chicken is perfectly complimented by the rich, aromatic marinade - and to up the flavour factor even further, everything gets simmered in a bright and tangy salsa that really enhances that south of the border taste.

Add marinade to chicken thighs coating well on all sides. You can marinade chicken thighs in a ziploc bag or on a sheet
Marinate for at least 1 hour, up to a maximum of 12 hours for enhanced flavour
Melt butter in skillet over high heat
Add marinated chicken thighs and sear for 3-5 minutes until golden
Flip chicken thighs and reduce heat to medium-high
Sear chicken for another 5 minutes
Reduce heat to medium and cook chicken for an extra 3 minutes per side
Add salsa and toss well to coat chicken thighs
Simmer sauce for 3 mins with chicken until internal temperature of thighs reach 165ºF
Finish chicken with fresh cilantro. Serve with cooked rice, avocados, tomatoes, lime wedges and extra sauce from the pan. Enjoy!
