Sealand Gluten Free Chicken Cordon Bleu with a Pear Balsamic Salad
A fancy summer recipe featuring expertly prepared chicken cordon bleu paired with a vibrant walnut pear balsamic salad.
4 pieces Sealand Gluten Free Chicken Cordon Bleu, frozen
2 tsp olive oil
Salt and pepper to taste (optional)
3 cups salad greens (your favourite brand or just lettuce, arugula or kale)
2 shallots, thinly sliced
3 pears, deseeded and thinly sliced
¼ cup toasted walnuts (or nut of choice)
2 tbsp balsamic vinegar (or balsamic syrup)
1 tsp Dijon mustard
1 tsp minced shallots
Salt and pepper to taste
¼ teaspoon Italian seasoning (or dried oregano)
¼ cup extra virgin olive oil
Balsamic Salad Dressing
Preheat oven to 375°F
Cook from Frozen. Unwrap frozen Gluten Free Chicken Cordon Bleu and place on baking sheet
Optional - lightly drizzle small amount of olive oil (or avocado oil) over cordon bleu and season with salt and pepper
Place baking sheet in oven and bake for 35-40 minutes until cordon bleu turns golden brown and reaches an internal temperature of 165-170°F when checked with a meat thermometer
While chicken cordon bleu is baking, make salad
Arrange salad greens on a plate, top with shallots and sliced pears then sprinkle with walnuts
Make balsamic salad dressing by combining all ingredients in sealable jar or container. Shake container well until dressing is emulsified
Once cordon bleu is cooked through, remove from oven and cut into thick slices
Drizzle balsamic dressing over salad and serve alongside sliced chicken cordon bleu. Enjoy!
