Preheat oven to 190°C (375°F), place oven rack in lower third of oven
Mix seasoning ingredients in small bowl
Season veal chops liberally on both sides with seasoning mix, pressing down to make sure seasoning sticks well to veal
Preheat oven safe, heavy skillet over medium-high heat and add butter for searing
Sear veal chops on one side for 7-8 mins until golden. Flip chops, sear for another 5 mins. Once seared on both sides, sear veal chop edges as best as possible
Transfer skillet with veal chops to preheated oven and roast for 25-35 mins (depending on how well done you want the veal)
Remove from oven and place chops on wooden board to rest
While veal chops are still hot, add extra butter and garnish, allowing butter to melt and soak in
Serve veal chops on platter with broccoli, potatoes, green beans and mushrooms (or any sides of your choosing)
