Bacon Wrapped Tenderloin with Peppercorn Sauce

Directions

1. Preheat heavy non-stick skillet over medium heat until hot

2. Place tenderloin steaks in skillet and sear for 3-4 minutes per side until internal temperature registers 5-10°F lower than your desired doneness

3. Once both sides are seared, stand steaks on their bacon wrapped edges and roll them to cook bacon until crispy

4. Let steaks rest for 3-5 minutes prior to serving. Temperature will continue to rise while resting. In the meantime, make the peppercorn sauce

5. Use mortar and pestle (or meat mallet/bottom of frying pan) to crack peppercorns. Do not make too small, just crack open

6. Add olive oil and shallots to skillet and cook for 1 minute

7. Add cracked peppercorns and cook for another 1 minute

8. Add beef broth, reduce heat to low and slowly whisk in heavy cream

9. Simmer for 3 minutes until thickened (add extra beef broth for thinner sauce)

10. Plate steaks and douse with peppercorn sauce

11. Garnish with fresh rosemary and serve with your favourite sides

12. Enjoy!
