Ingredients

2 Sealand Bacon Wrapped Tenderloin Steaks Small
Or
2 Sealand Bacon Wrapped Tenderloin Steaks Large
1 tsp olive oil
¼ cup chopped shallots
1 tbsp whole peppercorns
½ cup beef broth (or more for thinner sauce)
⅓ cup heavy cream
Fresh rosemary to garnish

Directions

Preheat heavy non-stick skillet over medium heat until hot
Place tenderloin steaks in skillet and sear for 3-4 minutes per side until internal temperature registers 5-10°F lower than your desired doneness
Once both sides are seared, stand steaks on their bacon wrapped edges and roll them to cook bacon until crispy
Let steaks rest for 3-5 minutes prior to serving. Temperature will continue to rise while resting. In the meantime, make the peppercorn sauce
Use mortar and pestle (or meat mallet/bottom of frying pan) to crack peppercorns. Do not make too small, just crack open
Add olive oil and shallots to skillet and cook for 1 minute
Add cracked peppercorns and cook for another 1 minute
Add beef broth, reduce heat to low and slowly whisk in heavy cream
Simmer for 3 minutes until thickened (add extra beef broth for thinner sauce)
Plate steaks and douse with peppercorn sauce
Garnish with fresh rosemary and serve with your favourite sides
