Sealand Scallops on a Watermelon Salad with Mint Vinaigrette

Ingredients

1 cup baby arugula or spinach

Salt, pepper and cayenne

1 tsp grape seed oil

1 tbsp Ghee or unsalted butter

2-3 radishes, thinly sliced (optional)

1/2 cup fresh mint leaves, puréed

3 tbsp white wine vinegar

1/2 cup grapeseed oil
-
1 tbsp honey or maple syrup

1 tsp salt
-
1/2 tsp fresh ground pepper
Mint vinaigrette
Directions
Prepare the vinaigrette in a blender adding all of the ingredients for 2-3 minutes. Pour into a small dish and set aside
Using a 3" cookie cutter, cut 1/2" thick watermelon slices into 8 circles. Set aside
Pat scallops dry and sprinkle with salt, pepper and cayenne
In a skillet over high heat, heat oil. Once it starts to smoke, add scallops. Sear for 2 minutes per side until lightly browned
Turn the heat down and add butter and cook for 1-2 minutes
Place scallops on top of watermelon slices and arrange over bed of arugula. Add radish and drizzle with mint vinaigrette
