Ingredients

4 Pieces of Sealand Bacon Wrapped Tenderloin, Defrosted overnight in the fridge
1/2 teaspoon each salt and pepper (or to taste)
2 Tablespoons olive oil

Caprese Salad

1 ball of fresh mozzarella , sliced
3 heirloom tomatoes, thinly sliced
1 cup fresh basil leaves
1 ball burrata cheese, broken into pieces
Chilli flakes (optional)
2 tablespoons basil pesto
Salt and pepper

Basil Butter

1/2 cup unsalted butter, at room temperature
2 Tablespoons Basil Pesto
Salt and pepper to taste
Chilli flakes to taste

Directions

Preheat the grill to 420 degrees F. If you can’t grill outdoors, use an indoor grill pan.
Place the bacon wrapped tenderloin on a cutting board and Sean the steaks on both sides with salt, pepper and olive oil.
Once the grill is hot, place the steaks on the grill. Cook for 8 minutes and flip, cook for an extra 5-6 minutes.
Remove the steaks on a cutting board, and let them rest for 8-10 minutes before slicing or serving.
In the meantime, start preparing the Caprese salad. Arrange the sliced tomatoes and cheeses over the basil leaves.
Season lightly with salt, pepper and drizzle the basil pesto.
To make the basil butter, mix all ingredients in a small bowl.
Serve the bacon wrapped tenderloin in the same platter with the caprese salad.
Dollop generous amounts of basil butter on top of each steak.
