4 Pieces of Sealand Bacon Wrapped Tenderloin, Defrosted overnight in the fridge
- 1/2 teaspoon each salt and pepper (or to taste)
- 2 Tablespoons olive oil

1 ball of fresh mozzarella , sliced
- 3 heirloom tomatoes, thinly sliced
- 1 cup fresh basil leaves
- 1 ball burrata cheese, broken into pieces
- Chilli flakes (optional)
- 2 tablespoons basil pesto
- Salt and pepper

1/2 cup unsalted butter, at room temperature
- 2 Tablespoons Basil Pesto
- Salt and pepper to taste
- Chilli flakes to taste
Caprese Salad
Basil Butter
Directions
Preheat the grill to 420 degrees F. If you can’t grill outdoors, use an indoor grill pan.
- Place the bacon wrapped tenderloin on a cutting board and Sean the steaks on both sides with salt, pepper and olive oil.
- Once the grill is hot, place the steaks on the grill. Cook for 8 minutes and flip, cook for an extra 5-6 minutes.
- Remove the steaks on a cutting board, and let them rest for 8-10 minutes before slicing or serving.
- In the meantime, start preparing the Caprese salad. Arrange the sliced tomatoes and cheeses over the basil leaves.
- Season lightly with salt, pepper and drizzle the basil pesto.
- To make the basil butter, mix all ingredients in a small bowl.
- Serve the bacon wrapped tenderloin in the same platter with the caprese salad.
- Dollop generous amounts of basil butter on top of each steak.
- Serve and ENJOY!
