Ingredients
- 2 Sealand Black Cod fillets
- 1/4 teaspoon salt and pepper
- 1 teaspoon neutral oil
- 4 whole cloves of garlic, lightly smashed
- 1/2 cup water
- 4 tablespoons butter, cold
- Salt and pepper to taste
- Dill leaves

Garlic Butter Sauce
Directions
- Remove the Sealand Black cod fillets from the packaging and defrost overnight in the fridge.
- Use a non stick skillet, and add the oil over medium high heat.
- Pat the black cod with kitchen towels on both sides to dry the fish.
- Season the fish on both sides with salt and pepper.
- Place the fish on the skillet and sear on both sides until golden, but not cooked through. About 1.5 minute per side.
- Add in the whole garlic cloves and toss lightly in the skillet until it becomes fragrant for 2 minutes.
- Cover the skillet with a lid, and lower the heat to low. Let the fish cook through on low heat for about 4-5 minutes.
- When ready, add in the water and increase the heat to medium low. Let the water simmer and toss the skillet around for the garlic to infuse the water.
- Turn off the heat after 1 minute, and then add in the butter gradually swirling the skillet to melt it in. Continue until the sauce has thickened.
- Serve the fish with the garlic butter sauce.
