Ingredients

3 Sealand Turkey breasts, defrosted
- 2 Tablespoons Italian seasoning blend, or:
- 1 teaspoon oregano
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/4 teaspoon chili flakes
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- 2 teaspoon dried basil
- 1 teaspoon each salt and pepper (or to taste)
- 2 Tablespoons Butter
- 1 teaspoon oil (neutral tasting oil )
- 4 cloves garlic, minced
- 1 cup sun dried tomatoes, cut into strips
- 1 1/2 cups stock or broth (chicken, beef or veggie)
- 1 lemon slice
- 1 cup heavy cream
- 1/2 teaspoon each Salt and pepper or to taste
- 2 cups fresh spinach leaves (baby spinach)
- Fresh parmesan to taste
- Fresh basil leaves, minced

Directions
- Remove the Sealand Turkey breasts from the packaging and defrost in the fridge.
- Season the turkey breasts on both sides with the Italian seasoning blend, or make your own and adjust the salt about to your taste.
- In a 9inch skillet over medium high heat, add in the butter and oil.
- When the skillet is hot, add the turkey breasts and sear on both sides until golden.
- Add int he garlic and sun dried tomatoes. Cook for 2 minutes until fragrant, and then add in the stock.
- When it comes to a boil, cover the skillet and cook over low heat. Alternatively you can cover the skillet with foil and place it in a 375 degrees F preheated oven for 30-40 minutes until cooked through.
- When the turkey breast has cooked through and the internal temperature is about 170 degrees F, it’s cooked. This process on the stove takes between 30-35 minutes depending on the thickness of the turkey breast.
- At that point increase the heat to medium and add in the cream, and season the sauce.
- When the cream starts to boil, turn off the heat and add in the spinach leaves. Mix them around and they will wilt in the hot cream.
- Remove the turkey breasts and slice them into 1/2 inch thick slices and return back to the sauce.
- Finish with lots of parmesan cheese and fresh basil. You can add chilli flakes too, and enjoy as it is or over some cooked pasta.
