In a bowl combine mango, red pepper, cilantro, jalapeño, vinegar and olive oil. Mix well and season to taste with salt and pepper. Let stand in fridge until ready to serve.
Heat oven to 400℉
In an ovenproof pan on high, heat vegetable oil until sizzling. Sear red snapper skin side down, for about 2 minutes, flip and place in oven for 5-6 minutes.
