Ingredients
- 3 pieces of Sealand Lobster Ravioli per serving , frozen
- Boiling Water
- 2 teaspoons Sea Salt
- 2 Tablespoons Olive oil
- 1 shallot, minced
- 2 garlic cloves, minced
- 1/2 cup Vodka
- 1 cup crushed canned tomatoes
- 1/4 teaspoon chilli flakes (optional)
- 1/4 cup fresh basil leaves
- 1/3 cup cream (18% or 35%)
- 1 teaspoon Italian Seasoning (or 1/4 teaspoon each salt, pepper and oregano)
- 1/4 cup Parmesan cheese

Directions
- Remove the bag of Lobster Ravioli from the freezer, and begin boiling the water with the sea salt over high heat.
- When the water comes to a boil, drop in the lobster ravioli into the pot one at a time.
- The ravioli needs anywhere between 4-6 minutes of cooking. When they begin to float to the surface of the water, the ravioli is ready.
- While they’re cooking, or before that, begin with the sauces.
- To make the Vodka Sauce: In a sauce pan or deep skillet, add in the olive oil over medium heat.
- Add the shallots and garlic and sauté for 3 minutes until softened, then add in the vodka and bring it to simmer.
- Simmer the vodka for 7-8 minutes until reduced by half. Then add in the crushed tomatoes, seasoning and fresh basil leaves.
- Bring that to a simmer, cook for 5-6 minutes, add in the cream and cook for 2-3 more minutes.
- Finish the sauce with parmesan cheese.
- To serve the Ravioli: Plate 2-3 Tablespoons of your favourite sauce, add in three pieces of lobster ravioli on top and then drizzle lightly with more sauce.
- Garnish with more herbs, parmesan cheese and chilli flakes if you like.
- Serve and enjoy right away.
