Name: Creamy Irish Coleslaw
Ingredients: 2 cups green cabbage, cored and thinly sliced; 2 cups purple cabbage, cored and thinly sliced; 1 cup carrot peeled and grated; ¼ cup onion, finely julienned; 1 cup mayonnaise; ⅛ tsp agar agar powder; ½ tsp sugar; 2 tbsp Greek plain yogurt; 2 tsp dijon; 2 tbsp 35% cream; ½ tsp garlic powder; ¼ tsp Kosher salt

This creamy coleslaw checks all the boxes. It’s the perfect side to really anything but, Sealand Chef Ivars created it for you to have as a side with your seafood dishes. But feel free to have it with steak, chicken or perfect with pulled pork. The flavour has a bit of tang, along with the creamy texture, it’s a sure winner for your side dish.

Ingredients

2 cups green cabbage, cored and thinly sliced
2 cups purple cabbage, cored and thinly sliced
1 cup carrot peeled and grated
¼ cup onion, finely julienned
1 cup mayonnaise
⅛ tsp agar agar powder
½ tsp sugar
2 tbsp Greek plain yogurt
2 tsp dijon
2 tbsp 35% cream
½ tsp garlic powder
¼ tsp Kosher salt

Directions

In a large bowl, mix together mayo, sugar, yogurt, Dijon, cream, garlic powder, salt and agar.
If you can’t find agar agar, you can substitute the same amount of gelatin. This helps the sauce from becoming watery.
Add cabbage, carrot and onion and mix well.
