1/2 a bag Sealand Gluten Free Cod Nuggets
- Oil Spray (optional)
- 4 Russet Potatoes peeled or peel on
- Soaking
- 2 cups ice
- 2 cups water or vinegar

1 cup Avocado oil any neutral high smoke point oil

1 Tablespoon oil spray
- 1 tablespoon sea salt
- 1 tablespoon vinegar powder for vinegar chips
- 1 tablespoon ranch powder for ranch

Directions
- Preheat the oven to 425 degrees F.
- Remove the Cod nuggets from the freezer and open the bag, no need to defrost the nuggets before cooking.
- Line a baking sheet with parchment paper.
- Arrange the Cod nuggets in a single layer on the baking sheet.
- Optionally, spray them with an oil spray before baking.
- Bake them for 25-30 minutes, flipping them halfway for a crisp nugget.
- For the Homemade Potatoes chips : You need a mandolin slicer to make the best potato chips. You also need to be SUPER careful because this tool is absolutely more dangerous than any knife in the kitchen.
- Set up the slicer to the 1/16 or 1/8 inch mark to get nice and thin chips.
- Slice the potatoes over a board and then prepare the ice bath.
- In a bowl mix the vinegar and ice together.
- Soak the sliced potatoes in the ice bath for 30 minutes. This ensures a crispy potato chip by pulling out excess starch from the potatoes.
- Remove the potatoes from the ice bath and place them over a kitchen towel. Cover them with another towel and rub them well, or leave to dry.
- Dry the potato slices really well before frying. Once your potatoes are all dried up you can either fry, air fry or microwave them.
- To Fry: Add the oil in a wok over medium high heat, maintaining the temperature to about 375 degrees F.
- Add in the sliced potatoes just a few at a time to avoid them clumping or lowering the oil temperature.
- Use a slotted spoon to flip the chips around until they’re golden and ready.
- Remove the chips on to kitchen paper to drain any excess oil. Repeat the process, and continue with the remaining potatoes.
- When done, simply sprinkle the seasoning of choice over the potatoes. Shake them well and enjoy right away.
- Microwave Potato Chips: To cook those chips in the microwave, start by using a microwave safe plate.Place a layer of wax paper over the plate. Now spread the sliced and dried potatoes in a single layer.
- Microwave for about 5-6 minutes depending on your microwave. They will be done when golden and they will crisp up more as they cool down.
- While this method creates crispy potato chips as well, it takes longer for large batches. So it's a great method if you're making a small batch only.
- Air Fryer Potato Chips: Place the slices in your air fryer basket and give them a good spray of oil. Air fry at 400 degrees F.
- Shake the basket well and air fry the potatoes for 3-4 minutes depending on how golden you prefer them. They come out crisp, not oily a bit, yet super golden.
- Season the Potato Chips when done.
- No mater which way you choose to cook the chips, they need to be seasoned immediately after cooking. So while they're still hot, sprinkle some seasoning on top and give that a shake.
- Serve them alongside the golden Cod Nuggets.
