Ingredients

2 pieces Sealand Skin on BBQ Chicken Breasts, defrosted
- 1 teaspoon oil
- 1 Tablespoon Butter
- 1 shallot, minced
- 2 cups mushrooms, sliced
- 2 cloves of garlic, minced
- 1/4 teaspoon salt and pepper, or to taste
- 2 sprigs fresh thyme
- 2 cups fresh spinach leaves
- 1 cup Parmesan cheese, freshly grated
- 2 cups mashed potatoes
- 1 tablespoon light truffle oil
- More parmesan cheese
To Serve
Directions
- Remove the Sealand BBQ chicken breasts out of the packaging and defrost overnight.
- Preheat the oven to 375 degrees F.
- In a cast iron skillet (or any oven proof skillet) preheat the oil and butter over medium high heat.
- Add in the chicken breasts, skin side down.
- Cook for 4 minutes per side.
- Remove the chicken when seared and golden, but not necessarily cooked through yet.
- In the same skillet, add in the shallots, mushrooms and garlic.
- Sauté them with salt and pepper for 3-4 minutes until softened.
- Add the thyme and chicken back to the skillet.
- Cover with foil and place it in the oven for 15 minutes until the chicken has cooked through.
- Remove the skillet from the oven and remove the foil.
- Add the spinach and mix it in. It will wilt in the heat of the skillet.
- Finish with parmesan cheese.
- Make the best mashed potatoes recipes and add in the truffle oil after mashing.
- Serve the mashed potatoes and top it with the chicken, mushroom and spinach mixture.
- Finish off with extra parmesan cheese.
