4 pieces Sealand Premium Cut Atlantic Cod Loins, defrosted
- 2 Tablespoons olive oil
- 1/2 teaspoon each salt and pepper
- 1 1/2 teaspoon oregano
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 Tablespoon olive oil
- 3 cloves garlic, minced
- 1/2 teaspoon each salt and pepper
- 2 bunches Asparagus, trimmed
- 1 tomato, diced
- 2 Tablespoons feta crumbles
- 1 tablespoon fresh oregano leaves
- 2 tablespoons olive oil
- 1 teaspoon lemon juice
- Pinch of salt

Directions
Remove the Sealand cod fish from the box and from the packaging. Defrost overnight in the fridge or over the counter for 3-4 hours.
Preheat the oven to 400 degrees F.
Add the trimmed asparagus, garlic, seasoning and olive oil to a baking sheet. Toss them all together until each asparagus spear is coated.
Place the tray tin the oven and roast for 12-15 minutes until tender.
Once the asparagus is ready, serve with the mixture of topping. Mix the tomato, feta, oregano, olive oil and lemon juice in a bowl. Use a spoon to top the mixture over the roasted asparagus.
Mix the dry spices for the fish in a small bowl.
Sprinkle the seasoning evenly on both sides of the cod fish, and drizzle with olive oil on both sides.
Preheat the air fryer at 400 degrees F for 3-4 minutes.
Add in the cod fillets in a single layer in the air fryer basket.
Air fry for 10 minutes. You may need 12 minutes depending on the thickness of the cod fish.
The fish is ready when it turns opaque in color and firm to the touch. A fork should flake off easily if used to flake the fish.
Remove the fish from the air fryer and drizzle some more olive oil on top, optionally.
Serve the fish with the side of the asparagus.
