4 Pieces of Sealand Stuffed Chicken Porduckin, frozen
- 1 large cucumber, diced into 1 cm cubes
- 2 large tomatoes, diced into 1 cm chunks
- 1/2 cup Feta cheese, cut up into 1 cm chunks
- 1/4 cup black olives (Greek Kalamata)
- 1/4 cups Green olives
- 1 red onion, cut into 1 cm dice
- 1 Tablespoon fresh oregano leaves
- 1 1/2 cups cooked orzo

1 large clove of garlic

2 tablespoons of Dijon mustard

2 tablespoons of honey

1/2 teaspoon of dried oregano leaves

2 tablespoon of lemon juice

2 tablespoons of white balsamic vinegar/Wine vinegar

1/3 cup of extra virgin olive oil

1/4 teaspoon of salt

Greek Orzo Salad

Directions
Preheat the oven to 375 degrees F.
Unpack the frozen stuffed chicken and arrange on a baking sheet with the sauce in the pouch.
Bake the chicken for 30-35 minutes until cooked through. A meat thermometer should read 170 degrees F when placed in the centre of the chicken.
In the meantime, prepare the orzo salad. Cook the orzo according to the package instruction and drain well. Set aside to cool.
Chop the salad ingredients and make the dressing.
To make the dressing, use a mason jar with lid or any sealable container and place all the dressing ingredients in the container/jar.
Seal the container and shake the dressing vigorously until it has emulsified.
In a large bowl, mix the cooled orzo, the salad ingredients and toss with the dressing.
Once the chicken is cooled slightly, slice it into 2 or 3 slices and serve right on top of the salad and enjoy.
