Ingredients

1/2 bag of Sealand Maple Sausage, removed form the freezer
- 3 Russet Potatoes (or yellow potatoes), peeled and cut into wedges
- 2 Large carrots, peeled and cut into diagonal discs
- 1 red bell pepper, cut into slices
- 1 red onion, sliced
- 1 teaspoon Dijon Mustard
- 2 Tablespoons extra virgin olive oil
- 1 teaspoon garlic powder
- 1 teaspoon Paprika
- 1/2 teaspoon salt and pepper (or to taste)
- 1 Tablespoon Maple syrup
- 2 eggs, cooked to your preference

- 2 cups Arugula
- 1/2 cup Dried Cranberries
- 1/3 cup Pecans
- Sweet Dijon Vinaigrette Or: White Balsamic vinegar and olive oil

Directions
- Preheat the oven to 375 degrees F. Remove the maple sausages from the freezer and from the bag.
- You can cook from frozen or wait for 1 hour to slightly thaw.
- Make the vegetables : Slice and cut all the veggies and spread them in a single layer on a baking sheet.
- In a small bowl, mix the maple glaze ingredients together and whisk well.
- Pour the glaze over the vegetables on the baking sheet and toss them well to coat.
- Roast the vegetables for about 35 minutes until cooked and tender.
- In the meantime, on another baking sheet, arrange the sausages in a single layer.
- Bake the sausage for 25-28 minutes until plump and slightly golden.
- Remove the veggies and sausage from the oven when ready.
- To serve for breakfast: Cook two eggs per person sunny side up, poached, boiled or however way is desired. Plate the bowl with maple veggies, maple sausage and the cooked eggs.
- To serve for dinner: Make the salad by mixing arugula, cranberries and pecan. Toss in a sweet white balsamic vinaigrette or simply in white balsamic vinegar, olive oil and salt.
- Arrange the salad, the maple veggies and maple sausage on the plate and serve.
