King Fish Steaks with Spring Asparagus Pearl Couscous
Grilled King Fish steaks with garlic, lemon, and herbs served over pearl couscous with asparagus. A quick, fresh, high-protein seafood dinner ready in 25 minutes.
Remove the Sealand King Fish Steaks from the box and from the packaging. Defrost overnight in the fridge or over the counter for 3-4 hours.
Mix the marinade ingredients in a small bowl.
Brush the King fish steaks with the marinade making sure to cover the sides as well.
Preheat an indoor or outdoor grill pan on medium high heat.
Sear the king fish for 3-4 minutes until golden, flip and cook for another 3-4 minutes or so until the fish is firm yet flakes easily.
To make the couscous: Preheat a small pot 4-5 quart over medium high heat and add the butter.
Toast the couscous for 1-2 minutes in the butter and then add in the stock.
Bring the stock to a boil and then cover the pot and drop the heat to low. Cook the couscous over low heat until the liquid is fully absorbed, about 15-16 minutes.
In the meantime, air fry the trimmed asparagus.
When the couscous is ready, add in the herbs, lemon zest, olive oil and air fried asparagus, and toss well.
Serve the couscous on a plate and top with the king fish steaks. Garnish with more herbs, lemon wedges and enjoy.
