Ingredients
- 18 pieces of Sealand Herb and Garlic Butterfly Shrimp, unpacked
- 2 Tablespoons Butter, unsalted
- 2 cups finely diced baby Tomatoes
- 1/4 cup finely diced white onions
- 2 garlic cloves, minced
- 1/2 cup basil leaves, minced
- 1/4 teaspoon each salt and pepper (or to taste)
- 1/4 teaspoon sugar
- 2 Tablespoons Balsamic syrup
- 2 tablespoons extra virgin olive oil
- 2 Tablespoons parmesan cheese, freshly grated
- 1 French bread or Italian loaf, size and thickness of your choice, cut into slices
- 2 tablespoons olive oil
- 1 whole clove of garlic

Directions
- Remove the Sealand Herb and Garlic Butterfly Shrimp from the packaging, and you can use frozen or defrost.
- Preheat the oven to 375 degrees F.
- Cut the loaf of bread using a serrated knife on an angle into slices, about half an inch thick.
- Arrange the bread in a single layer on a baking sheet.
- Drizzle the bread with olive oil and bae for 12-14 minutes until golden and toasty.
- As soon as the bread is out of the oven, toasted and still warm, rub the garlic clove on the surface of the bread to infuse it with flavour. Set the tray aside.
- To make the bruschetta, mix all ingredients in a bowl and toss well.
- For the shrimp, preheat an indoor or outdoor grill pan over medium high heat.
- If using an indoor grill, add in the butter and place the shrimp, cut side down on a grill pan.
- Grill for 2-3 minutes until the shrimp turns pink in colour and then flip and continue grilling for 2 more minutes. Remove the shrimp from the grill.
- To assemble the bruschetta, place the toasted bread on a serving dish.
- Top each toast with about 1.5 Tablespoons of the tomato mixture.
- Place one piece of grilled shrimp over the tomato mixture on the toast. Serve right away.
