These shrimp skewers, by Chef Ivars Rasa, are a perfect appetizer or add to a salad for a light meal. Feel free to add as much shrimp as you want to the skewer depending on how many you like.

Ingredients
12 Black Tiger Shrimp
1 large bunch cilantro, finely chopped
4 cloves garlic, finely chopped
2 tbsp paprika
1 tbsp cumin
1 tsp Kosher salt
1 tsp fresh ginger
½ tsp cayenne pepper
3 tbsp vegetable oil
Juice of 1 lemon
12 skewers, soaked in water
2 peaches, peeled and chopped into 1-inch cubes
Directions Combine all of the marinade ingredients in a large bowl. Remove the tails from the shrimp and add to the marinade. Let sit for 20-30 minutes.
Using one shrimp and one cube of peach, add to skewer. Repeat until done.
Heat BBQ to medium-high and cook for 2-3 minutes per side. Serve immediately.
