Arrange the Beef wellington on a baking sheet and bake for 20-25 minutes until golden and puffy.
In the meantime, make the green beans.
Blanch the green beans in salted boiling water for 5 minutes until softened.
Remove the green beans and drain the excess water.
In a sauce pan, add the butter, shallots, garlic and almonds over medium heat.
Keep tossing the ingredients around until the shallots, garlic and almonds are toasty and golden.
Remove the almond mixture and add in the green beans right into the skillet with the butter. Keep tossing the green beans with the butter over medium high heat to coat everything in the butter well.
Then add in half the almonds mixture and toss well.
