Sealand Duck Sausages

Directions

Potato Wedges

1. Preheat oven to 204°C (400°F)

2. Scrub unpeeled potatoes. Cut in half lengthwise, and then cut each half into thirds lengthwise

3. Place potatoes on baking sheet and drizzle with olive oil, salt, and pepper, tossing potatoes to coat evenly

4. Spread potatoes evenly over baking sheet

5. Bake potatoes for 20 mins, flip them and return to oven for another 15 mins until potatoes are crispy and golden

Roasted Bell Peppers

1. Wash peppers, remove stems and seeds and cut into 1 inch squares

2. Arrange in single layer on baking sheet

3. Coat well with olive oil and spices

4. Bake at 204°C (400°F) for 25 mins until peppers are soft and tender

Duck Sausages

1. Remove frozen sausages from packaging

2. Heat 2 tbsp olive oil in skillet over medium-high heat

3. Add duck sausages and sear on all sides

4. Reduce heat to medium and toss sausages until cooked through (internal temp 74°C/165°F)

5. Meanwhile, cut red onion into small, thin slices

6. Add arugula, red onion, potato wedges and roasted peppers to a large sharing plater

7. Top platter with sausages and serve
