Ingredients 2 Sealand Duck Meatloaf
Mashed Potatoes 4-5 medium baking potatoes, peeled and quartered
1 cup milk
2 tbsp butter
Salt and pepper (to taste)
Butter Sauce ½ cup butter
6-8 cloves garlic
1 cup chicken stock
2-4 sprigs fresh thyme
Salt and Pepper (to taste)
Green Beans 2lbs green beans
4 tbsp water
2 tbsp olive oil
1 tsp chili flakes (optional)
1 tsp Kosher salt
½ tsp coarse black pepper
2 cloves garlic, minced
Directions Remove frozen meatloaf from packaging
Arrange on baking sheet
Bake at 163°C (355°F) for 60-75 mins until internal temp reaches 74°C (165°F)
Meanwhile, prepare mashed potatoes, butter sauce and green beans
Once meatloaf is ready, remove from pan and cut into ¾ inch thick slices
Plate meatloaf with mashed potatoes and green beans. Season to taste and drizzle meatloaf with butter sauce
Mashed Potatoes
Bring large pot of water to boil
Add potatoes, reduce heat to medium and simmer for 15-20 mins until potatoes are soft when forked
Heat milk and butter in small saucepan over low heat until butter is melted
Drain potatoes and return to pot. Add heated milk and butter, stirring and mashing until potatoes are smooth and creamy
Season with salt and pepper to taste
Green Beans
Chop stem ends off of green beans
Add green beans and water to a large skillet and heat over medium-high heat
Once water has evaporated, add oil and chili flakes to skillet, stirring to coat the green beans
Cook green beans for 5-7 mins, stirring often, until beans begin to brown
Add salt, pepper and garlic and cook for another 1-2 mins
Butter Sauce
Add butter to small saucepan over medium-low heat
Add minced garlic and cook for 10 mins
Add chicken stock, thyme, salt and pepper and cook for a further 15-20 mins until thickened
